Flourless Pumpkin Bread

Hey Babes!

Today I am sharing a healthy pumpkin bread recipe with all of you today that I found on the thebakermama.com via Pinterest. If I am being honest, I attempted to make pumpkin oatmeal bars the other day and I totally fucked it up despite how easy the recipe appeared. The oatmeal did not cook all the way through and I sadly ended up tossing most of it because the bottom was raw. So, today I went back into the kitchen and successfully made a flourless pumpkin bread that is not only edible but actually really good!

Here is what you need

2 cups of rolled oats

1 can of pumpkin puree

½ cup of maple syrup

2 eggs

1 teaspoon of baking soda

1 teaspoon of cinnamon

Extras: 1 teaspoon of vanilla extract & Semi-sweet chocolate chips

Instructions

Preheat the oven to 350 degrees Fahrenheit.

Combine all ingredients into a large bowl and pour mixture into a blender.

Blend mixture until consistency is smooth.

Pour blended mixture into a lightly greased loaf pan and sprinkle the top with chocolate chips.

Bake bread for 30 minutes or until done.

Here’s The Tea

This bread is actually really delicious, but you will be aware that it is a healthier baked good. I have to admit that I did not have a full can of pumpkin puree, due to my mishap with the oatmeal bars, so that could possibly be why my bread tasted so “healthy.” I think this fall recipe would be delicious as a breakfast option served with a cup of hot tea and a little bit of almond butter.
