Valentine’s Day Cupcakes

Hey Babes! 

Valentine’s Day is just around the corner and today I’m sharing an easy Valentine's Day cupcake recipe. Truthfully, today's original blog post was supposed to be a VDay inspired outfit, but it snowed all day on Sunday and I just couldn't bring myself to do it. So, instead I played in the snow with my favorite toddler and baked Funfetti cupcakes. 

These are so easy to make and everyone loves Funfetti! Preheat your oven to 350°F and while your oven is warming up, add three eggs, a cup of water and a half cup of oil to the packaged mixture. Stir until the batter is no longer clumpy. Line the cupcake sheet with liners and then fill each liner about half way with batter. 

Then you'll bake the cupcakes for about 15 minutes or until they are golden brown. Once the cupcakes have cooled, it is time to decorate! Let your creativity shine through. I played it really safe and just used the sprinkles that came with the pink frosting. They were toddler approved and he so doesn't care if they are intricately decorated or not and truthfully, neither do I. 

I love cupcakes in theory, they're tiny, they're cute and you don't feel so guilty about eating them. However, whole cakes are just easier for me to store. So instead of baking more cupcakes, I dumped the rest of the batter into a round pan and baked this cake for about 20 minutes or until the toothpick comes out clean.
