Irish Potato Recipe

Hey Babes! 

Recently while my mom and I were at Wawa, she purchased a box of Oh Ryan’s Irish Potatoes and to her dismay they were as hard as a rock. So, she was like... “Kelly, do you think you could make them?”

Since I am nothing if not a doting daughter in need of CoNTeNt, I went on Pinterest and looked for recipes! I found an easy recipe from the blog, Kitchen Fun with my three sons and got to work!

You’ll Need

4oz of softened cream cheese 

1/4 cup of softened unsalted butter 

4 cups of powered sugar 

2 1/2 cups of shredded coconut 

1 tsp vanilla extract 

1 tbsp of cinnamon powder 

1/2 cup of light brown sugar 

Let’s Get Started

When your cream cheese and butter have softened, you’ll cream them together in a large mixing bowl. 

Then, it’s time to add in your vanilla extract and powered sugar. Gradually add in the powered sugar, because if you add it all at once it’ll be a fucking mess! 

After it is gently mixed, channel your inner Moira and David Rose and fold in the shredded coconut with a silicone spatula. Once you’ve figured out what fold means, you’ll cover the sugary concoction with foil and refrigerate for an hour! 

While you wait for the taters to set line a baking sheet with parchment paper and mix together the brown sugar and cinnamon coating.

Once the mixture is firm, you’ll want to roll the mix into small balls and drop them on the parchment paper. After you’ve rolled the potatoes, it’s time to cover them in the cinnamon sugar coating. 

(Tbh, I’m not sure how to improve this step, because it was mildly difficult for me to get the coating to stick to the taters. Lmk if you have any advice!)

This recipe wasn’t too difficult to prepare and didn’t involve any actual baking, which was nice and I only ran into a problem when it came to coating the potatoes! Plus they actually taste really great.
