When Life Gives You Lemons

Hey Babes! 

When life gives you lemons, you bake them into a cake. That’s how the saying goes right?

Here’s What You’ll Need 

Lemon Cake Mix 

3 Eggs 

1 Cup of Water 

1/2 Cup of Canola Oil 

Ricotta Cheese 

Butter 

Flour 

Lemons 

Icing 

Preheat the oven to 350°F and then add in the cake mix with three eggs, one cup of water and a half cup of oil. Mix until smooth! 

Now, I added in an extra step and decided to wing it and toss in three large spoonfuls of ricotta cheese to make the cake moist. 

Next, you’ll prep the bundt pan with melted butter and flour. I read online that, that is the best way to coat the bundt pan to ensure a beautiful cake. I’m not an expert, but I have Google so here we are. 

Then, you’ll bake the cake for about 40 minutes. I always stick a toothpick in my creations to see if they’re done. If the toothpick comes out clean, then you’re good to remove the cake.

Remove the bundt cake from the pan and allow it to cool! When the cake has reached room temperature, it’s time to ice that baby!

I am not a culinary queen, so I took a container of store bought frosting and microwaved it until it reached a runny consistency. Then, I took a spoon and drizzled the icing over the cake! Slice a little lemon for garnish and voila!
