Turning Cake Mix Into Cookies

Hey Babes!

The best way to spend a chilly rainy Sunday is to bake! So, this past Sunday, I put on my slippers and opened the cabinet to see what I could make that day. Unfortunately for me, almost every box recipe called for vegetable oil, which we didn’t have. Sigh, so I decided instead to make cookies with a Gingerbread Cake Mix from Betty Crocker.

I preheated the oven to 375°F and then in a large bowl, I combined the mix, three tablespoons of melted butter and 1/4 cup of water, until a sticky dough formed.

The dough was too sticky to roll into balls, so I covered the dough and let it chill in the fridge for about 15 minutes.

Then, I took the chilled dough and rolled it into lumpy turd adjacent balls and baked them for 10 minutes. Once done, allow the cookies to cool before you indulge.

The cookies came out so chewy and soft, which I loved. I topped a few with powdered sugar and the others I coated with a vanilla glaze icing. Delicious!
