Sheet Pan Roasted Cauliflower Gnocchi

Hey Babes! 

The first time I saw the word gnocchi, I pronounced it like ganache and my new college friends were shook that ganache was being served for dinner that night in the dining hall. Minutes later when they found out that it was gnocchi and not ganache they were extremely entertained by me and my advanced phonetic skills. True story babes! 

I didn’t grow up eating gnocchi and I typically don’t like super doughy foods. I actually don’t enjoy actual authentic gnocchi, so that is why I love the cauliflower gnocchi from Trader Joe’s. Today, I’m going to share how I make them, because the instructions on the bag are fucking terrible and should be avoided at all costs.

In addition to the roasted gnocchi, I just simply sautéed some spinach and minced garlic in a pan with a little olive oil spray until it was cooked. Then I warmed up some jarred pasta sauce in the microwave, because I’m a 3-star Michelin rated chef. French trained!
